ingredients

  • 1 cup coarse Koy bulgur
  • 2 cups water or 1 cup chicken broth and 1 cup water
  • 1 small onion, diced
  • 1 bell pepper, diced or sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon Koy pepper paste
  • 1 tablespoon Koy tomato paste
  • 1/2 tablespoon dried mint (optional)
  • 1 teaspoon dried thyme or oregano (optional)
  • 1/2 red pepper flakes (optional)
  • Salt to taste

instructions

  • Brown 1 tablespoon butter and add 1 tablespoon olive oil in a pot.
  • Add diced onions and sauté until transparent.
  • After the onions are softened, add the peppers and saute for 1-2 min.
  • Add minced garlic and continue to saute.
  • Add the bulgur while continuing to mix the ingredients
  • Add the tomato and pepper paste, mix thoroughly.
  • Season with dried mint, thyme, salt and add red pepper flakes. (optional)
  • Add the water or broth and turn the heat up to high.
  • Once it starts to boil, lower the heat to low and let simmer for 10-15 min until most of the liquid is absorbed.
  • Turn off the heat and cover with a kitchen cloth or paper towel and let it rest for 10 minutes.
  • Fluff up with a fork and serve.
