ingredients
- 1 cup coarse Koy bulgur
- 2 cups water or 1 cup chicken broth and 1 cup water
- 1 small onion, diced
- 1 bell pepper, diced or sliced
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon Koy pepper paste
- 1 tablespoon Koy tomato paste
- 1/2 tablespoon dried mint (optional)
- 1 teaspoon dried thyme or oregano (optional)
- 1/2 red pepper flakes (optional)
- Salt to taste
instructions
- Brown 1 tablespoon butter and add 1 tablespoon olive oil in a pot.
- Add diced onions and sauté until transparent.
- After the onions are softened, add the peppers and saute for 1-2 min.
- Add minced garlic and continue to saute.
- Add the bulgur while continuing to mix the ingredients
- Add the tomato and pepper paste, mix thoroughly.
- Season with dried mint, thyme, salt and add red pepper flakes. (optional)
- Add the water or broth and turn the heat up to high.
- Once it starts to boil, lower the heat to low and let simmer for 10-15 min until most of the liquid is absorbed.
- Turn off the heat and cover with a kitchen cloth or paper towel and let it rest for 10 minutes.
- Fluff up with a fork and serve.
