  • 1 cup fine Koy bulgur
  • 1 cup water
  • 1/2 bunch scallions, chopped
  • 1/2 bunch parsley, finely chopped
  • 1/2 bunch mint, finely chopped
  • 1 tablespoon Koy tomato paste
  • 1 tablespoon Koy pepper paste
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon pomegranate molasses
  • Juice of half a lemon
  • Salt to taste


  • Put the bulgur in a bowl and add 1 cup of boiling hot water, cover with plastic wrap and let sit for at least 10 minutes. After 10 minutes, uncover and fluff with a fork. Let still until cooled.
  • In a small bowl, whisk together olive oil, pomegranate molasses, pepper paste, tomato paste, lemon juice and salt.
  • Using your hands, gently mix the bulgur with the olive oil mixture.
  • Add chopped herbs to the bulgur and olive oil mixture.
  • Evenly incorporate all of the ingredients and serve.
