ingredients
- 1 cup fine Koy bulgur
- 1 cup water
- 1/2 bunch scallions, chopped
- 1/2 bunch parsley, finely chopped
- 1/2 bunch mint, finely chopped
- 1 tablespoon Koy tomato paste
- 1 tablespoon Koy pepper paste
- 1/4 cup extra virgin olive oil
- 1 tablespoon pomegranate molasses
- Juice of half a lemon
- Salt to taste

- Put the bulgur in a bowl and add 1 cup of boiling hot water, cover with plastic wrap and let sit for at least 10 minutes. After 10 minutes, uncover and fluff with a fork. Let still until cooled.
- In a small bowl, whisk together olive oil, pomegranate molasses, pepper paste, tomato paste, lemon juice and salt.
- Using your hands, gently mix the bulgur with the olive oil mixture.
- Add chopped herbs to the bulgur and olive oil mixture.
- Evenly incorporate all of the ingredients and serve.
